Healthy Black Sesame wholemeal Scone

I like the taste of scone which i bought in the Coffee house very much, taste of wholesome and nutty and they smell so nice, and i decided to give it a try...i searched for very simple and basic recipe of scone, haha..really simple than what i expected! Since there was black sesame in my kitchen, so i modified the recipe (basic scone) to be black sesame wholemeal scone, even healthier version as i cut down the butter content and half of the plain flour was substituted by whole wheat flour, well it taste nice even without the butter spread.

Ingredient:(5 small scones)
a.90g organic whole wheat flour
b.60g organic unbleached plain flour
c.1/4 tsp salt
d.1/2 tsp sugar
e. 1.5 tsp baking powder
f. 20 g or 25 g butter (room temperature)
g. 85 ml milk (room temperature)
h. raisin - optional
i. black sesame - optional

Methods:
1. mix a-e thoroughly.
2. add the butter inside the 1. and rub the butter until breadcrumb texture.
3. add the milk inside the mixture together and mix the mixture with the cutting motion untill the mixture form a soft dough. Remember not to over mix to avoid the production of gluten.
4. Gently knead on a floured surface 6 times. (press and turn, 6times only oh!)
5. Pat into a 9-inch square (1/2 inch thick). Cut into 9 (3-inch) squares. Cut each square diagonally to form 2 triangles. (any shape you like)
6.Transfer to an ungreased baking sheet, and bake until golden brown (less than 15 minutes depending on the size of scone).

When East meet West(Malaysia Food)

When east meet the west and start knowing about the wholemeal flour,we start to adding the healthier flour to substitude the traditional white (bleached) flour in making our traditional bread-like food - Pau for healthy purpose. Firstly, i thought they(pau and bread) are the same except one is by baking and the other is steaming. Well, they are different! Even the flour (all-purpose flour / so-called pau flour). And today, i was making my first nutritionous wholemeal vegetable pau since i heard that there are plenty of pau in the market consist of too much...too much of addictives, preservatives and even colouring (artificial Pandan green), i love pau...but now i have to make my own pau.

Here i would like to share with my friends the methods of making the the delicious (i think!!) wholemeal vegetable pau.

Ingredients or pau dough:
250 gm. wholemeal flour
250 gm. pau flour
4 Tbsp. shortening(you may choose not to add)
100 gm. castor sugar
1 Tbsp. double-action baking powder
12 gm. Instant Yeast
200 ml. warm water

Ingredients for fillings: (you may add anything you like..)
300 gm. Turnip - shredded
50 gm. dried mushrooms - shredded
65 gm. carrot - shredded
1 piece Beancurd (hard) - cut into cubes.
Tbsp. oyster sauce
3 nos. garlic - chopped
1 Tbsp. sugar
1 tsp. pepper
1 tsp. sesame oil
130 gm. water
1 tbsp. cornflour
some cooking oil for frying

Method for frying fillings:
(1) Heat up the wok with some oil.
(2) Fry garlic until fragrant, add in beancurd and mushroom and fry followed by the rest of the ingredients.
(3) Can add in a bit of salt to your taste.
(4) Dish up and let it cool before wrapping.


Method for making pau:
(1) Mix instant yeast and warm water and let it stand for 5 mins.
(2) Beat all the ingredients together for about 15 mins until it form into a dough.
(3) Cover and let it rest for about 30 mins (or become double of its size).
(4) Pinch and weigh dough into 40 gm. balls. Flatten the dough, put in the fillings and place onto a pau paper.
(5) Rest for 45 mins (or become double of its size). then steam over high heat for 10 mins.
